Flowerings

January - February
These first two flowerings mark the beginning of the harvest season, occurring where the vegetation is low and are regrowths that occur in places where there was a lot of burning. The color of this honey ranges between 35 and 55mm, the tajonal honey we buy in January and February tends to crystallize due to its high sugar content.

March - April - May
These flowerings mark the second harvests throughout the Yucatan Peninsula, they are the most characteristic and representative. These flowerings range between 18 and 20° humidity. They are between 55 and 70mm of color. March, April and May are the strongest months of beekeeping production.

These flowerings are characteristic of the beginning of the humid honey season, third harvest, occurring from late May, June, and part of July. The humidity of these flowerings is between 20.5 and 22°. Generally, these flowerings are used for divisions among beekeepers, or left as reserve for the bees for the critical period that will begin in the following months.
